1 tablespoon Oil, canola
3 cup Onions
3 tsp Ginger Root
4 clove Garlic
6 cup Cooking Stock
2 tbsp Soy Sauce
3 tbsp Red Curry Paste
0.5 tsp Sea Salt
1.5 cup slices Carrots
2 cup, strips Peppers, Sweet, Red
2 cup Organic Cherry Tomatoes
2 medium Squash, Summer, Zucchini, Includes Skin
8 oz Squash, Summer, Crookneck And Straightneck
6 oz Baby Spinach Salad
4 cup Rice Noodles, Cooked
1 stalk, large (11"-12" long) Broccoli, Cooked

Recipe Directions for Thai-Style Vegetable Curry

Heat oil in a Dutch oven over medium-high heat. Add onion, ginger, and garlic to pan; sauté 5 minutes. Add 1 cup Vegetable Stock, soy sauce, curry paste, and salt. Stir in carrot; cook 2 minutes. Add bell pepper, tomatoes, zucchini, squash, and mushrooms; cook 2 minutes, stirring occasionally. Stir in remaining 3 cups stock and spinach; bring to a boil. Reduce heat, and simmer 5 minutes or until carrot is tender, stirring occasionally. Serve over noodles.
