Recipe Ingredients for Thai-Style Stir-Fried Chicken

6 tbsp Brown Rice Vinegar, Organic
6 tsp packed Sugars, Brown
1 fl oz Lime Juice
0.67 tbsp Red Curry Paste
2 tsp Spices Crushed Red Peppers
16 oz Fresh Boneless Skinless Chicken Breasts
1.5 tbsp Vegetable Oil, Canola
1 cup, chopped Onions
1 cup, chopped Carrots
8 oz Mushrooms
4 oz Lite
1 tbsp Fish Sauce
0.5 tsp Salt, Table
1 cup Food You Feel Good About Bean Sprouts
1/4 cup Coriander Leaves
6 oz Thin Rice Noodles

Recipe Directions for Thai-Style Stir-Fried Chicken

  1. Combine first 5 ingredients in a large zip-top plastic bag. Add chicken; seal and marinate in refrigerator 15 minutes, turning once.

  2. Remove chicken from bag and reserve marinade. Heat 1 tbsp oil in a large nonstick skillet or wok over medium high heat. Add chicken; stir fry 4 minutes. Remove chicken from pan; keep warm. Add remaining oil to pan. Add onion and carrot; stir fry 2 minutes. Add mushrooms; stir fry 3 minutes. Add reserved marinade, scraping pan to loosen browned bits. Add coconut milk and fish sauce; bring to a boil. Reduce heat, and simmer 1 minute. Stir in chicken and salt; cook 1 minute. Top with sprouts and cilantro. Serve over cooked noodles.
