Flavorful and Decedant Spicy Curry

Recipe Ingredients for Thai Style Spicy Vegan Curry

1 1/2 cups coconut milk
1/2 cup unsweetened soy milk
3 1/2 tblsp red curry paste
1 cup zucchini
8 oz water chestnuts
8 oz bamboo shoots
1 1/2 cup diced tofu

Recipe Directions for Thai Style Spicy Vegan Curry

Place curry paste in non stick 12inch pan then incorporate 1 cup coconut milk to curry paste. Place pan over burner on medium high heat. Make sure curry and coconut milk are fully incorporated. Bring mixture to a boil. Add tofu and remaining coconut milk along with soy milk. Bring to a simmer adding remaining vegetables once. Remove from heat when the vegetable are heated through. Serve over rice or pasta.
