A mildy spicy lentil dish, nice with brown rice

Recipe Ingredients for Thai-style Lentils

500 g lentils, large brown
4 tablespoons margarine
2 onions, finely chopped
250 g mushrooms, sliced
2 teaspoons minced garlic
1 teaspoon minced ginger
440 g coconut milk
3 tablespoons red chili paste
3/4 cup water
1 salt to taste

Recipe Directions for Thai-style Lentils

  1. Rinse and boil lentils with 4 bay leaves, 2 cinnamon sticks and 4 cloves.

  2. Saute the onions in the margarine until translucent, then add the garlic and ginger paste and saute for a couple of minutes.

  3. Add the mushrooms, and cook until liquid is mostly absorbed.

  4. Add the cooked lentils, coconut milk, water and red chili paste.

  5. Season with salt or vegetable stock powder to taste.

  6. Cook over low heat for about 10 minutes until flavours are well-combined.

  7. Serve with brown rice.
