Recipe Ingredients for Thai-Style Chicken Stir Fry

1 chicken breast
1 large onion
1 green pepper
2 garlic cloves
1/2 tsp ginger
1/2 chili pepper (kung pao)
1 tsp curry powder
2 tbs tomato paste
1 tbs soy sauce
2 tbs water
1 cup lettuce, shredded
1 tbs canola oil
1/2 tsp lemon juice

Recipe Directions for Thai-Style Chicken Stir Fry

  1. Slice onion, green peppers and chicken into thin strips. Set chicken aside. Mince garlic, ginger and chili pepper. Heat wok with oil. Add peppers, onions, garlic, chili and ginger.

  2. Cook quickly until peppers are tender-crisp. Set aside. Add chicken to wok, cook through until tender. Add vegetables back to wok.

  3. In small bowl add tomato paste, soy sauce, water and curry powder, stir. Add sauce mixture to wok, to coat. Heat until bubbling.

  4. Serve on bed of lettuce. Add lemon juice, enjoy.
