basic stir-fry with ichiban eggplant, bok choy, onion and red pepper with garlic, ginger and thai basil

Recipe Ingredients for thai stir fry

2 japanese eggplants
2 1/2 cups baby bok choy
1/2 large vidalia onion
1/2 cups red bell pepper
2 tablespoons olive oil
1/4 cup thai basil
1/2 tablespoon garlic
1/2 tablespoon ginger

Recipe Directions for thai stir fry

  1. heat oil (flavored oils are great for this) - add garlic and onion, then add pepper, then add eggplant, and then add bok choy, thai basil and ginger. cook until tender but still crispy.

  2. serve over rice or noodles.
