Makes a great breakfast or light snack. This recipe is a bit time-consuming (you have to soak the sticky rice overnight) but well worth the effort. Dip in sweet chili paste or in Tangy Lime Dip

Recipe Ingredients for Thai Sticky Rice patties

2 c uncooked rice (Thai sticky rice)
6 c water
1/2 c eggbeaters
2 tbs water
2 tbs fish sauce

Recipe Directions for Thai Sticky Rice patties

  1. Soak the sticky rice overnight in the 6 C of water

  2. The next day, steam the sticky rice. I use the traditional method of steaming the rice, but you can make it in a regular pot or rice cooker--see this website for details:http://thaifood.about.com/od/thaisnacks/ss/stickyricehowto.htm

  3. While rice is cooking, mix the eggbeaters, 2 Tbs water and 2 Tbs fish sauce in a shallow container.

  4. Once sticky rice is finished, divide into 12 pieces.

  5. Heat a lightly oiled pan over medium heat.

  6. Flatten the rice into 12 patties, then dip each side of the patty into the egg mixture.

  7. Fry the patties. Flip after a minute or so to cook the other side. Patties are finished when the egg coating is golden and slightly crispy.
