Very tasty filling, but healthy, soup. I use butternut squash as a base and add other veggies and various Thai spices depending on what is in my house at the time. Number of servings depends on the size of the squash. I would say it makes at least six large bowls.

Recipe Ingredients for Thai Squash Soup

48 oz Squash, Winter, Butternut
14 fl oz Lite
50 peanut Peanuts, All Types, Dry-roasted
1 medium (3") Apples
2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 tbsp Olive Oil
3 tbsp Peanut Satay Sauce

Recipe Directions for Thai Squash Soup

  1. Boil squash, apple, and other veg until very soft

  2. Roast peppers with olive oil under broiler

  3. Drain water from squash but save on the side

  4. Add roasted peppers to squash

  5. Add coconut milk and spices to squash

  6. Use a blender or soup wand to blend all the ingredients. Add squash water if needed to attain desired consistency
