Spicy, creamy soup. 2T peanut oil 1kg pumpkin or Squash, coarsely chopped 1 medium carrot, coarsely chopped 1 medium potato, coarsely chopped 1 medium onion, coarsely chopped 4c chicken/veggie stock 3t sambal oelek (a chilli paste in jars available in the asian section of the grocery store.) 1 1/2 t garam masala 3t lime juice 75g bean thread vermicelli noodles 3/4c coconut milk

Recipe Ingredients for Thai Squash or Pumpkin Soup

1 medium raw Carrots
2000 grams Squash, Winter, Butternut
1 medium Sweetpotato
1 medium Orange Hothouse Bell Pepper
1 medium Onions
4.5 cup Vegetable Stock
1 lime yields Lime Juice
3 tsp Chili Paste
1.5 tsp Garam Masala
75 g Vermicelli
2.31 oz Cultured Coconut Milk

Recipe Directions for Thai Squash or Pumpkin Soup

  1. Heat oil in a large saucepan; cook pumpkin, carrot, potato and onion,stirring, until browned lightly. Stir instock, sambal, lemon grass, juice and garam masala. Bring to a boil; simmer, uncovered, 30 minutes.

  2. Menawhile, cut dry noodles into 5cm lengths, place in a medium heatproof bowl, cover with boiling water, stand only until just tender; drain.

  3. Blend or process pumpkin mixture, in batches, until smooth; return to pan. Stir in milk and noodles. Bring to a boil, simmer, stirring, 2 minutes.

  4. Ladle hot soup into serving bowls; sprinkle with coconut and cilantro. Serve with crusty bread.

  5. For leftovers: cool, and pour into gallon bags. Freeze.
