Recipe Ingredients for Thai squash & pineapple curry

1 tablespoon vegetable oil
1 onion
4 teaspoons Thai red curry paste
1 pound squash, chunked
200 ml coconut milk
200 ml water
5 ounces frozen green beans
237 g pineapple

Recipe Directions for Thai squash & pineapple curry

  1. Heat the oil in a wok or pan, fry the onion for about 5 minutes or until softened. Stir in the red curry paste, then add the squash, reduced fat coconut milk and water or stock. Simmer for 15-20 minutes until the squash is tender. After 10 minutes tip in the green beans.

  2. Stir in the pineapple cubes and some coriander/cilantro leaves and cook for a few minutes to heat the pineapple through. Serve with steamed rice or noodles.
