Recipe Ingredients for Thai Squash & Pineapple Curry

1 tbsp Oil, Vegetable Corn, Salad Or Cooking
1 medium (2-1/2" dia) Onions
2 tbsp Red Curry Paste
500 grams Squash, Winter, Butternut
7 oz Vegetable Stock
14 oz Lite Coconut Milk
140 grams Frozen Green Beans
237 grams Pineapple Chunks in Its Own Juice
4 grams Coriander Leaves

Recipe Directions for Thai Squash & Pineapple Curry

  1. Heat Oil in wok or frying pan. Fry onion for 5 mins. Stir in red curry paste. Add Squash, coconut milk and stock.

  2. Simmer for 15-20 mins. After 10 mins cooking, add the green beans.

  3. Stir in the pineapple and coriander just until the pineapple heats through.

  4. Sprinkle with coriander leaves and serve with rice or noodles.
