Recipe Ingredients for Thai Spring Roll Bites

3 wrappers Spring Roll Wrapper
0.5 cup, chopped Peppers, Sweet, Red
4 oz Red Onion
1 cup, chopped or diced Chicken, Breast, Meat Only
1 cup, shredded or chopped Lettuce, Butterhead
0.25 cup, chopped Carrots
2 1tsp Oil, Sesame
1.5 tbsp Soy Sauce
3 tbsp chopped Onions, Spring Or Scallions

Recipe Directions for Thai Spring Roll Bites

  1. Saute the onions, peppers, and carrots until they are just al dente. If you have a wok, it is perfect for this application. Remove from the heat and let cool.

  2. Spread set the spring wrappers on a work surface, then spread a layer of bib lettuce on each one.

  3. Slice or brunois the chicken, then place that atop the lettuce.

  4. Finish with a layer of the cooked vegetables, then roll up.

  5. Slice the each wrap into four portions and serve.

  6. If not serving immediately, place a damp paper towel atop them and keep in the fridge so they do not dry out.
