w/ veggies and coconut milk -- used Wegman's Thai Culinary Stock -- serving 1 cup

Recipe Ingredients for Thai Spinach and Shrimp Soup

85 g baby carrots
105 g yellow bell pepper
200 g baby spinach
1 tbsp olive oil
1/2 tbsp thai red curry paste
2 tbsp soy sauce
1 tbsp fish sauce
1 lb shrimp
13 1/2 fl oz coconut milk
32 fl oz broth
3 tbsp chopped fresh basil

Recipe Directions for Thai Spinach and Shrimp Soup

  1. saute veggies til soft in olive oil

  2. add curry paste saute for a min or two, add spinach

  3. add soy and fish sauces and stock and shrimp --- simmer til shrimp and spinach done

  4. add basil

  5. serve
