Recipe Ingredients for Thai-spiced Sweet Potato and Lentil Soup

2 tsp safflower oil
1 small onion, chopped
3 cloves garlic, minced
1 tbsp Thai red curry paste
2 cups cauliflower, chopped
2 lbs sweetpotato, peeled and chopped
1 cup red lentils, dry
6 cups water
2 cube chicken stock
1 cup coconut milk
1 1/2 tbsp Thai fish sauce
2 tsp brown sugar
2 tbsp lime juice, freshly squeezed
1 tsp lime zest
1/2 tsp coconut extract, optional

Recipe Directions for Thai-spiced Sweet Potato and Lentil Soup

  1. Heat oil in large pot

  2. Add onion and saute 3-5 min

  3. Add garlic and red curry paste, saute 1 min

  4. Add cauliflower, sweet potato, red lentils, water (with stock cubes dissolved in it),fish sauce, brown sugar, and coconut milk

  5. Bring to a boil, reduce heat, then simmer partially covered for about 20-25 min, stirring occasionally

  6. Stir in lime juice and coconut extract, adjust seasonings, then puree, making it completely smooth or leaving it a bit chunky. Adjust seasonings, stir in lime zest, and serve

  7. Serve with lime wedges if desired

  8. Makes about 10 cups total; serving size is 1 1/4 cup
