Recipe Ingredients for Thai shrimp and veggies

1 1/4 pound shrimp, uncooked
1 red bell pepper, diced
1 zucchini, sliced
4 tbsp natural peanut butter, crunchy style
2 tsp red curry paste
3 tbsp green onion, sliced
4 sprigs of cilantro

Recipe Directions for Thai shrimp and veggies

Saute pepper and zucchini in wok or skillet with a squirt of lime juice or non-stick cooking spray until they begin to get tender. Add shrimp and cook just until it loses it translucence. Stir in peanut butter and curry pasted and add water to achieve desired amount of sauce. Toss in green onions for just a minute. Serve over brown rice or whole wheat noodles and garnish with cilatro and lime wedges.
