Recipe Ingredients for Thai Shrimp and Cucumber Salad

16 oz shrimp, cooked, moist heat
4 oz (1 cup) bell pepper, thinly sliced
5 oz cucumber, seeded, thinly sliced
90 g onion, thinly sliced
15 g (half) jalapeno, minced
1 tbsp olive oil or canola oil
2 tsp brown sugar
2 tbsp lime juice
10 g (1/4 c) mint, chopped
25 g (4 tsp) fish sauce
10 g (2 tbsp) cilantro, chopped

Recipe Directions for Thai Shrimp and Cucumber Salad

  1. In a large bowl, combine cooked shrimp, bell pepper, cucumber and onion and set aside.

  2. For dressing: Combine jalapeno, oil, sugar, lime, mint, fish sauce and cilantro. Mix well, until sugar dissolve.

  3. Pour over shrimp, pepper, cucumber and onion. Toss until blended. Serve on a bed of spinach or lettuce of your choice.

  4. Enjoy!

  5. You may add more or less jalapeno if you like the dish spicier.
