Recipe from Cooking Light - they say 262 calories per 2 cup serving with 7.1 g fat, 30 g protein, 1.8g fiber and 18.3 g carbs. I made it with half can of coconut milk because I couldn't find lite coconut milk and forget to buy the Clam Juice so left it out too but it was still delicious and even my 5 year old granddaughter loved it.

Recipe Ingredients for Thai Shrimp and Chicken Soup

1/2 lb Chicken, Boneless, Skinless
1/2 lb Shrimp, Large
13 1/2 oz Coconut Milk, Lite
3 oz Snow Peas
24 oz Chicken Stock
1/4 cup Lime Juice, Fresh
2 tablespoons Cilantro, Fresh, Chopped
3/4 tsp Red Curry Paste
1 1/2 tsp Ginger, Fresh, Minced
2 tsp Garlic, Minced, Bottled
1 tbsp Fish Sauce
1 cup Clam Juice, bottled
8 ozs Mushrooms, sliced
2 tbsps Sugar or 2 packets Stevia
2 tbsps Green Onion,tops, sliced

Recipe Directions for Thai Shrimp and Chicken Soup

  1. Combine the chicken broth, clam juice, fish sauce, garlic, ginger and red curry paste in a large Dutch oven and stir with a whisk.

  2. Add mushrooms and bring to a boil.

  3. Reduce heat and simmer 4 minutes.

  4. Add the shrimp, chicken and snow peas and return to a boil.

  5. Cover, reduce heat and simmer 3 minutes.

  6. Stir in lime juice, chopped Cilantro, green onions, sugar and coconut milk.
