Recipe Ingredients for Thai Shrimp and Chicken Soup (adapted from Cooking Light)

4 c. chicken broth, less sodium
1 cup bottled clam juice
1 T fish sauce
2 tsp. minced garlic (I use jarred)
1 1/2 tsp. minced ginger (I use fresh)
1/2 tsp. red curry paste
8 oz. mushrooms, sliced
1 lb. shrimp, peeled large
1 lb. chicken thigh, boneless, skinless, cut into pieces
3 oz. snow peas
1/4 c lime juice, fresh
2 T sugar
2 T green onions, sliced
2 T cilantro, fresh chopped
13 1/2 oz. coconut milk, light (1 can)

Recipe Directions for Thai Shrimp and Chicken Soup (adapted from Cooking Light)

  1. Combine first six ingredients in a large Dutch Oven, stirring with whisk. Add mushrooms, bring to a boil. Reduce eat and simmer 4 minutes. Add chicken, shrimp and snow peas, bring to boil. Cover, reduce heat, and simmer 3 minutes.

  2. Stir in lime juice and remaining ingredients. Cook 2 minutes, or until thoroughly heated.
