Really tasty rice recipe. Add 1 pound of vegetables for a complete meal.

Recipe Ingredients for Thai Rice

2 cup Rice, Brown, Medium-grain, Cooked
2 pepper Peppers, Hot Chili, Red
0.5 cup Coconut Milk
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 carrot (7-1/2") Carrots
4 tsp Ginger Root
3 clove Garlic
0.25 cup Coriander Leaves

Recipe Directions for Thai Rice

Chop 1 hot red pepper, 2 spring onions, 1 tablespoon ginger, 3 cloves garlic, 1 stem of lemon grass. You might want to add hot sauce depending on heat of peppers. Cut into strips vegetables of your choice (go for at least 1 pound plus 1 large carrot. Sautee vegetables & set aside. Sautee garlic mix. Add rice with 1/2 cup coconut milk, cook for a couple of minutes. Add vegetables back and stir. Add chopped fresh parsley, cilantro and if desired mint.
