Delicious and low fat comfort food. served as a breakfast in Thailand, where I fell in love with it.

Recipe Ingredients for Thai rice porridge

9 cups water
3/4 cup uncooked rice, preferably jasmine
1 tsp. soy sauce
1/2 tsp. white pepper or ground red pepper
1 tsp. salt
1/4 cup spring onions, thinly sliced
75 grams fresh coriander, chopped
1 cup mushrooms (optional)
2 cloves garlic, thinly sliced
200 grams pak choi, chopped (optional)

Recipe Directions for Thai rice porridge

  1. Bring water and rice to boil in a large pot.

  2. Reduce heat to low and cover. Cook 1.5-2 hours, stirring occasionally, until you have a smooth, porridge-like mixture.

  3. Add vegetables or protein (lightly fried tofu works well, or chicken for meat-eaters), if desired, and continue to cook until done.

  4. Add soy, pepper, salt, green onions, and coriander and stir to combine.
