Thai Red Curry with a lower fat, low carb twist. I use Mae ploy brand paste. Use chik'n grillers or chick'n strips

Recipe Ingredients for Thai Red Curry

6 oz lite coconut milk
2 tbs Thai red curry paste
1/2 small zucchini
1/2 baby eggplant
1/2 yellow pepper
1/4 cup basil
2 tsp sugar
1/8 tsp fish sauce

Recipe Directions for Thai Red Curry

  1. Coat veggie chik'n or chicken with curry paste and steam saute in a small amount of coconut milk for two minutes. Add remaining ingredients to green pepper and simmer for ten minutes. Add Thai basil to garnish. Serve with tofu shirataki noodles (low carb) or jasmine rice.

  2. You can further season with a TBL sugar and TSP fish sauce if you like, but it adds extra sugar and salt.
