Recipe Ingredients for Thai Red Curry

2 tbsp Red Curry Paste
1 block Tofu, Extra Firm
2 1tsp Oil, Sesame
2 tbsp Butter
1 carrot (7-1/2") Carrots
1 small Onions
3 oz Mushrooms, Shiitake
1 clove Garlic
1 tbsp Sweet Red Chili Sauce
1 cup (8 fl oz) Water
14 oz Pure
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium raw Tomato Roma

Recipe Directions for Thai Red Curry

  1. Drain and press tofu to get most of the water out of it.

  2. Heat 1 tsp sesame oil and 1 T butter in sautee pan over medium high heat.

  3. Slice tofu into 1/4" thick slices.

  4. Sautee on both sides until gold brown, remove from pan.

  5. Heat 1 tsp sesame oil and 1 tsp butter again over med-high heat.

  6. Julienne carrots, thinly slice onions, slice mushrooms, and crush garlic.

  7. Sautee all over medium-high heat until fragrant, about 7 min.

  8. Add Thai Red Curry Paste and Red Chili Sauce to pan and sautee for 2 min.

  9. Add tofu back to pan and add 1 C water, mix well, bring to boil then reduce heat to low and simmer.

  10. As water cooks off and sauce begins to thicken, slice red (or red and yellow) bell peppers and quarter roma tomato.

  11. When sauce begins to get very thick, add the remaining vegetables and 1 can coconut milk (light coconut milk to reduce calories if desired)

  12. Simmer until heated through, about 3 min.

  13. Remove from heat and serve immediatly. Garnish with cilatro or spicy basil if desired.
