Recipe Ingredients for Thai red curry

14 fl. oz. coconut milk lite
1 tbsp. Thai Kitchen Red Curry Paste
1 tbsp. fish sauce
1 1/2 tbsp. brown sugar
1 medium onion, chopped
1 medium tomato, chopped
2 cups broccoli, chopped
1 sweet potato, chopped
1 yellow bell pepper, chopped
5 leaves basil, fresh
4 pieces White Wave baked tofu Sesame Peanut Thai style
1 cup portabella mushroom, diced

Recipe Directions for Thai red curry

  1. simmer coconut milk with red curry paste over medium heat 5 minutes

  2. add sweet potato

  3. add fish sauce, brown sugar, water

  4. chop vegetables and let simmer 10 minutes

  5. add vegetables and tofu

  6. continue cooking 3-5 minutes

  7. add basil

  8. serve with steamed brown rice
