Healthy Thai Red Curry Mussels with Coconut Milk and Greens...mmmmm

Recipe Ingredients for Thai Red Curry Mussels

16 oz Mussel, Blue
1 large Onions
5 clove Garlic
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 fruit (2" dia) Limes
1 tbsp Red Curry Paste
2 oz Coconut Milk
3 teaspoon Dark Brown Sugar
7 1/2 grams Fish Sauce
5 cup Spinach
2 cup, chopped Kale
5 leaves Basil, Fresh

Recipe Directions for Thai Red Curry Mussels

  1. Heat oil in a large high-sided skillet or Dutch oven over medium-high heat.

  2. Add garlic, scallion whites, lime zest and curry paste to taste; cook until fragrant and the paste is sizzling, 1 to 3 minutes.

  3. Add lime juice, coconut milk, brown sugar and fish sauce.

  4. Bring to a boil and let cook for 2 minutes.

  5. Add mussels, return to a simmer, cover and cook for 6 minutes. Spread watercress kale or spinach over the mussels, cover and cook until slightly wilted, about 4 minutes; stir into the mussels. Serve garnished with scallion greens and basil.
