Recipe Ingredients for Thai Red Curry Chicken with Pineapple over Rice

27 g olive oil
680 g chicken breasts
20 g red curry paste
150 g onion
100 g carrots
200 g zucchini
164 g red pepper
40 g fish sauce
383 g lite coconut milk
20 g corn starch
380 g chicken broth
167 g potato
160 g pineapple
368 g rice

Recipe Directions for Thai Red Curry Chicken with Pineapple over Rice

  1. While prepping veggies, cook cubed potatoe in microwave and water for 8 min.

  2. Brown chicken strips in oil with 2 cloves garlic.

  3. Add onions so they cook longer. Add 2.5 T of red curry paste and mix in oil and chicken. In desired cooking time order, add remaining vegetables and "stir fry".

  4. Add coconut milk, fish sauce, the juice of one lime, salt and pepper to taste, and 0.5 teaspoon coriander.

  5. Add 1.5 T corn starch to chicken broth. Add to mixture and cook until thick.

  6. Add in potato and pineapple for a few minutes.

  7. I served on mahatma valencia rice.
