Recipe Ingredients for Thai Red Chicken Curry

4 tbl canola oil
2 onions
4 tsp Thai red curry paste
4 cloves garlic
2 c coconut milk
2 c chicken stock
4 tbl fish sauce
2 tbl brown sugar
1 tsp salt
2 red bell peppers
2 c jasmine rice
24 oz chicken breast
4 tbl cornstarch
4 tbl lemon juice

Recipe Directions for Thai Red Chicken Curry

  1. Heat oil in a large saucepan over medium heat and cook the onions, stirring occasionally, until softened, about 5 mins. Add the curry paste and garlic and cook, stirring, for 1 min. Add the coconut milk, stock, fish sauce, sugar, and salt, then bring to a boil. Add the bell peppers, cover with a lid, reduce the heat to medium, and simmer for 12mins.

  2. Wile the curry simmers, bring 3 cups of water to a boil in a saucepan. Stir in the rice, and keep stirring until the water returns to a boil. Cover the pot with a lid, reduce the heat to very low, and simmer gently for 15 mins.

  3. Add the chicken to the curry and simmer, covered, for another 8 mins. Add the cornstarch paste and stir continuously until the curry thickens, then stir in the lemon juice. Serv on a bed of rice.
