8 cups pumpkin or butternut squash
8 cups water
4 cups Coconut Milk, Canned (Liquid Expressed From Grated Meat And Water)
1/4 cup ginger
1/4 cup lime juice
1/2 cup chopped onion
1/2 cup chopped garlic

Recipe Directions for Thai Pumpkin soup

  1. cook peeled squash

  2. blend drained peices saving the liquid

  3. return to liquid

  4. blend ginger, lime juice, coconut milk, onion, garlic

  5. add to squash and squash stock

  6. let simmer until smooth stirring constantly

  7. serve hot or cold
