Recipe Ingredients for Thai peanut veggie bowl

2 cups eggplant, chopped
1 cup zucchini, chopped
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1 carrot, chopped
1/4 cup soy sauce
1/4 cup rice vinegar
2 tbsp peanut butter
1 tbsp chili paste
1 tsp salt

Recipe Directions for Thai peanut veggie bowl

  1. sautee onion and bellpepper and carrot until semi tender

  2. add eggplant and zucchini

  3. add 2 tbsp of soy sauce

  4. add salt

  5. cokk until tender

  6. add chili paste, peanut butter, vinegar, and soy sauce.

  7. blend into veggies and allow to become creamy

  8. simmer a few minutes until sauce is warmed
