Yummy sweet and spicy noodles. Use chunky peanut butter for extra crunch.

Recipe Ingredients for thai peanut noodles

12 oz rice noodles
4 tablespoons peanut butter
4 tablespoons thai sweet chili sauce
1/2 lb boneless skinless chicken breast
2 tablespoons soy sauce
1/2 lb broccoli

Recipe Directions for thai peanut noodles

  1. Marinate chicken in soy sauce, bake or fry using Pam not oil to prevent sticking. Let rest for 5 minutes after cooking through. Slice thin.

  2. Cook noodles according to directions. Add sweet chili sauce and peanut butter.

  3. Steam broccoli.

  4. Plate noodles, top with sliced chicken. Add broccoli on the side.
