Really quick and really good! From All Recipes.com - I used red pepper flakes as I didn't have the red chilli sauce the recipe called for - adjust according to taste.

Recipe Ingredients for Thai Peanut Noodles w/ Chicken

9 oz chicken breast, boneless, skinless, cut in bite-sized pieces
6 oz whole wheat spaghetti
1/2 cup chicken broth
3 T soy sauce
3 T peanut butter
3 cloves garlic, minced
1 1/2 T honey
2 tsp red pepper flakes
3 green onions, diced for garnish
1 cooking spray

Recipe Directions for Thai Peanut Noodles w/ Chicken

  1. Bring a large pot of water to boil. Add noodles, cook till al dente, drain and keep warm.

  2. Meanwhile, heat a saucepan to medium-high and spray with cooking spray.

  3. Saute chicken until slightly browned, about 8-10 minutes. Remove and keep warm.

  4. Reduce heat to medium/med-low. Combine broth, soy sauce, peanut butter, garlic, honey, and pepper flakes in saucepan. Stir until peanut butter is melted and sauce is bubbly. Let thicken slightly.

  5. Remove from heat and combine noodles, chicken and sauce in noodle pot. Toss to coat.

  6. Serve with a side of veggies such as broccoli or snap peas.
