Recipe Ingredients for thai peanut chicken salad

5 cups romaine lettuce, chopped
6 oz chicken breast
1 tbsp natural peanut butter, creamy
1 tsp chili paste
1/4 cup soy sauce
1/4 cup rice vinegar
1 tsp red pepper flakes
1/2 cup carrot, julienne
1/2 cup bell pepper, julienne
1/2 cup cucumber, diced
2 tbsp cilantro, chopped

Recipe Directions for thai peanut chicken salad

  1. diced chicken breast

  2. use pam spray to grease a frying pan

  3. over med/high heat cook chicken in pan until tender

  4. add vinegar, soy sauce, chili paste and peanut butter

  5. stir together, melting peanut butter and combing to form a creamy sauce...add water if too thick.

  6. add vegetable to lettuce in large bowl.

  7. pour chicken and sauce mixture over vegetables and toss.

  8. you can also add carrots and peppers to chicken while cooking to soften a bit.
