Thai Peanut Chicken Recipe

A lower fat option of Thai peanut chicken. It is quick to put together and if you choose to slow cook it, the smell when you get home is divine!

Recipe Ingredients for Thai peanut chicken

1 lb chicken breast, meat only, diced
1/2 cup reduced fat peanut butter
1 1/2 cups salsa, sodium reduced
1 tbsp lime juice
1 tbsp ginger root, grated

Recipe Directions for Thai peanut chicken

  1. Cut up chicken into large pieces and brown in a frying pan- using a no stick spray or 2 tsp olive oil, whatever preference you have.

  2. Mix Salsa, Peanut butter, lime juice and grated ginger root all togther. Pour over chicken and let simmer for 30-45 minutes.

  3. Serve with brown rice, coucous or a whole wheat pasta.

  4. Alternately, you can put the cut up raw chicken into a slow cooker, pour the salsa mix over top of the chicken and cook on low for 6-8 hours. If the salsa sauce is too thick, thin out with a bit of broth or water before pouring over chicken.
