Chicken in Peanut sauce over Zucchini noodles, made easy with a slow-cooker. Low Carb! Serves 6.

Recipe Ingredients for Thai Peanut Chicken Low Carb BOTB

16 oz Chicken, Breast, Meat Only
1/2 tbsp Chopped Garlic
0.66 cup Peanut Butter, Chunk Style
1 cup Natural Goodness Chicken Broth
2 cup zucchini
0.33 cup Soy Sauce
1 tsp Sugars, Granulated
1 medium (2-1/2" dia) Onions
1/2 oz Cocktail Peanuts Lightly Salted
1 serving, raw Cilantro
1/4 tsp Pepper, Red Or Cayenne

Recipe Directions for Thai Peanut Chicken Low Carb BOTB

  1. 1.Chop chicken into bite-size pieces.

  2. 2. Chop up onion.

  3. 3. Stir together in slow-cooker: peanut butter, garlic, peanut butter, chicken broth, soy sauce, red pepper, sugar, chicken chunks and onion.

  4. 4. Cover and cook on low 3-4 hours.

  5. 5.115 minutes before end of cooking, slice zucchini in rounds or make noodles with a wide vegetable peeler. Steam or saute in small pan until tender crisp,

  6. about 5 minutes.

  7. 6.To serve: Stir the mixture in slow-cooker till smooth. Ladle chicken mixture over zucchini noodles.

  8. 7. Garnish with peanuts and cilantro, if desired.
