Makes about 3200 grams for 400 grams/serving. My first attempt at a spicy potato soup. I say failure is the first step towards success!

Recipe Ingredients for Thai Onion Potato Soup

4 cup Organic Chicken Cooking Stock
1400 grams Potatoes, Russet, Flesh And Skin
2 large Onions
0.75 cup Lite Coconut Milk
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
44 grams Herb Blend
3 tbsp Green Curry Paste
1 medium raw Bell Pepper Red
1 tbsp Olive Oil

Recipe Directions for Thai Onion Potato Soup

  1. Saute the sliced onions in the olive oil until soft. Add the sliced pepper, and saute another minute.

  2. Next add all the rest of ingredients, chopping the potatoes.

  3. After simmering for 30 minutes I used the blender to cream half the soup. I used a spoon to put the big chunks into the blender and then poured the blended soup back into the soup.
