Recipe Ingredients for Thai Noodles

8 ounces linguine or other noodles
4 ounces firm tofu, diced
1/3 cup chili sauce
3 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon honey
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint
2 tablespoons vegetable oil
2 carrots, shredded
2 red bell peppers, slivered
1 cup bean sprouts
2 tablespoons chopped peanuts

Recipe Directions for Thai Noodles

  1. Cook noodles in boiling water until tender, drain and rinse with cold water and set aside.

  2. Mix chili sauce, soy sauce, lime juice, honey, and 2 tablespoons of water in a bowl, then add in the cilantro and mint.

  3. Add the carrots, red peppers and bean sprouts to the sauce and stir to coat.

  4. Stir in the noodles and toss.

  5. Add the tofu and toss gently.

  6. Serve topped with a sprinkle of the chopped peanuts.
