Recipe Ingredients for Thai Noodles with Peanut Sauce

8 ozs. whole wheat pasta
1 tablespoon toasted sesame oil
1/3 cup peanut butter
2 tablespoons fresh lemon juice
1 tablespoon low sodium soy sauce
1 teaspoon light brown sugar
1 large carrot, shredded
1 cup frozen peas
1 cup grape tomatoes, cut in half
1/4 cup minced scallions

Recipe Directions for Thai Noodles with Peanut Sauce

  1. Follow directions in cookbook, with the following exceptions.

  2. Cook the vegetables while cooking the pasta separately.

  3. Make the sauce. When making for Johnnie, eliminate the peanut butter. I love it with it just as it is!
