Thai Coconut Rice Noodle Soup with Chicken & Shrimp

Recipe Ingredients for Thai Noodle Soup

1 cup cilantro
1 cup basil
4 garlic cloves
1 oz fresh ginger
2 jalapeno peppers
2 T fish sauce
1 T chili paste
1 T sugar
2 T lime juice
400 ml lite coconut milk
4 cups non-fat chicken stock
8 oz boneless skinless chicken breast , large dice
4 oz shrimp
100 g thin rice noodles
1 carrot, julienned
1 cup lettuce, shredded
1 cup bean sprouts
1/4 cup peanuts, chopped
1/4 cup cilantro, finely chopped

Recipe Directions for Thai Noodle Soup

  1. Combine first 10 ingredients (up to and including coconut milk) in food process and process until smooth.

  2. Put in large pot with chicken broth and simmer for 10 min, covered.

  3. Add chicken & shrimp and simmer for another 5 min.

  4. Add noodles, carrots, lettuce & bean sprouts and simmer for another 3 min.

  5. Ladle into bowls and top with chopped peanuts and cilantro.
