An easy and delicious Thai recipe!

Recipe Ingredients for Thai Mango and Peanut Shrimp with Vegetables and Rice

1 lb of shrimp, peeled and deveined
3 cloves of garlic, minced
1 tsp crushed red pepper flakes
13 1/2 oz lite coconut milk
6 tbsp. peanut butter
3 tsp lite soy sauce
5 tbsp lime juice
1 cup frozen mixed vegetables (heated through in microwave)
1 mango, pitted and sliced into thin strips
2 cups (thai jasmine rice) (uncooked)

Recipe Directions for Thai Mango and Peanut Shrimp with Vegetables and Rice

  1. Spray saute pan with no stick spray and saute shrimp until pink. Stir in garlic and red peper flakes until garlic is fragrant.

  2. Set shrimp in bowl and add remaining ingredients to saute pan except veggies, mango and rice.

  3. Once sauce is finished, add shrimp, veggies and mango strips to pan. Stir well making sure all items are coated with sauce.

  4. Serve shrimp mixture over 1 cup of cooked rice.
