Altered a recipe for pork lettuce wraps. Serve with soaked bean thread, matchstick cut carrots and cucumber. Also sauces like chile sauce, peanut sauce or 1/4 c. corn syrup mixed with 1 Tbsp. lime juice, 1/4 tsp. salt and 3 Tbsp. minced cilantro. Calorie count is for chicken and lettuce only so you can determine additions desired.

Recipe Ingredients for Thai Lettuce Wraps with Chicken

3 lb. chicken breasts, skinless, boneless
1/8 c. hoisin sauce
1/8 c. plum sauce
1 tbsp. honey
1 tbsp. ginger root, minced
1/8 c. low-sodium soy sauce
1 tbsp. sesame oil
1 tbsp. minced garlic
24 leaves butter lettuce

Recipe Directions for Thai Lettuce Wraps with Chicken

Cut each chicken breast into 3 or 4 pieces. Mix marinade hoisin sauce through garlic and put in plastic bag with chicken 1 to 4 hours. Remove from refrigerator 30 minutes prior to grilling (since I didn't have time I just marinaded in a bowl on the counter while I was preparing the other ingredients. Grill chicken with whatever method desired about 3 minutes per side. Transfer to cutting board and let rest 5 minutes before slicing. Arrange lettuce, carrots, cucumber, bean thread on large serving platter. Place small bowls with sauces on side. Put 2 slices pork on top of lettuce leaf, mound carrot, cucumber and bean thread on top. Drizzle sauce of choice on top and roll lettuce leaf to eat.
