Thai Green Curry Recipe

Made with chicken and plenty of vegetables. Use chicken breast to cut down on fat. I like the texture and tastiness of chicken thighs. If chicken is raw, fry with onions until sealed, then cook. I tend to use cooked chicken.

Recipe Ingredients for Thai Green Curry

500 g chicken thighs
400 ml coconut milk
200 ml water
1 tbsp Green Curry Paste
1 tbsp corn oil
2 cloves garlic, flattened
1 large onion, sliced
1/2 red pepper, sliced
1/2 pepper, green, sliced
1 large carrot, shredded
40 g mange tout
75 g bean sprouts
1 tsp sesame oil
2 tsp honey
5 g corn flour
1 tsp salt

Recipe Directions for Thai Green Curry

  1. Heat cooking oil into large saucepan and then fry the onions until soft.

  2. Add garlic to pan.

  3. Stir in paste and cook it until it's evenly coated on the onions.

  4. Add entire can of coconut milk. Use the water allowance to rinse out the can. Add chicken.

  5. When chicken is cooked, add in carrots and peppers.

  6. When carrots have softened, add in the mange tout and bean sprouts.

  7. Season to your taste. I like sesame to add a deliciousness, salt to give it more flavour and some honey or sugar to balance out the spicyness.

  8. You may find your curry a bit watery. You can cook off this water or add some cornflour to thicken slightly.

  9. Serve with steamed rice.
