Thai Green Curry Coconut Shrimp with Basil

Recipe Ingredients for Thai Green Curry Coconut Shrimp with Basil

0.33 tbsp Olive Oil
4 medium (4-1/8" long) Onions, Spring Or Scallions
1 tbsp Green Curry Paste
2 clove Garlic
16 oz Shrimp, Mixed Species
3 serving light coconut milk thai kitchen
2 tbsp Fish Sauce
2 tbsp Basil, Fresh

Recipe Directions for Thai Green Curry Coconut Shrimp with Basil

  1. In a large nonstick skillet or wok, heat oil on medium-high flame. Add scallion whites and green curry paste; sauté one minute.

  2. Add shrimp and garlic, season with salt and cook about 2-3 minutes.

  3. Add coconut milk, fish sauce and mix well; simmer about 2-3 minutes, or until shrimp is cooked through.

  4. Remove from heat, mix in scallion greens and basil. Serve over basmati rice and enjoy!
