Chicken and veggies in a coconut curry sauce

Recipe Ingredients for Thai green curry with chicken

240 g chicken breasts, uncooked
1 tsp sesame oil
1 tbsp green curry paste
250 ml light coconut milk
1/4 cup fresh cilantro
1 cup of diced tomatoes
2 cups of frozen vegetables

Recipe Directions for Thai green curry with chicken

  1. Dice chicken and sautee in a sprayed pan

  2. In a wok, heat veggies through, add cooked chicken

  3. In a separate pot, put 1 tsp sesame oil, ad 1 tbsp thai green curry paste (or to taste), slowly add coconut milk, stirring as you go. Add tomatoes and heat through. If further sweetness is desired, add sugar. I don't though. Its not in the count in the recipe.

  4. Pour sauce over veggie and chicken mix, add cilantro, mix together and serve. Can be served as is, (like a stew), or over rice or rice noodles.
