This fruit salad is rich in Vitamin C, potassium, and fibre. Watermelon is also rich in lycopene, an antioxidant that helps prevent cancer of the stomach, colon, and prostate.

Recipe Ingredients for Thai Fruit Salad

236 g pineapple (1/2 fruit)
1/2 honeydew melon
1/4 watermelon
1 star fruit
2 oz coconut flakes
4 passion fruit
76 g lime juice (2 limes)

Recipe Directions for Thai Fruit Salad

  1. Peel the pineapple and cut into quarters. Cut out and discard the tough inner core. Cut each quarter lengthwise then slice across into chunks.

  2. Scoop out the seeds from the honeydew melon, cut into slices, peel and slice into chunks.

  3. Cut the watermelon into chunks, discarding skin and any seeds.

  4. Cut the star fruit into four, and then slice finely.

  5. In a large bowl toss together the pineapple, honeydew melon, watermelon, star fruit and coconut. Halve the passion fruits and coop out their pulp into a separate bowl. Mix in the lime juice, then pour over the mixed fruit, and toss together. Cover and chill until serving.
