Thai Fried Rice Recipe

A simple and easy dish made from whatever veggies are available. Inspired by some Thai Fried Rice I had in a restaurant. For a more authentic Thai-spicy taste, add a serrano pepper, sliced lengthwise. NOTE: This is mostly done to taste and not by specific measurements.

Recipe Ingredients for Thai Fried Rice

1 4oz Chicken Breast
1 1/2 cups chopped Broccoli
1/2 cup chopped Onion
1 cup chopped Mushrooms
1/2 cup chopped Carrots
1 medium Tomato
2 cups Rice, Brown, Medium-grain, Cooked
3 Green Onions
1 tbsp Oyster Sauce
1 tbsp Low-Sodium Soy Sauce
2 cloves Garlic
1 tsp Ginger Root
2 tbsp Olive Oil

Recipe Directions for Thai Fried Rice

  1. Slice the chicken breast into very thin pieces. Cut up broccoli, carrots, and other ingredients into stir-fry sizes.

  2. Add olive oil to wok or deep pan and allow to come to medium-high heat.

  3. Stir-fry chicken, onions, garlic, ginger, carrots, and broccoli.

  4. When the chicken is no longer pink, beat the eggs together lightly and fry until scrambled (in the same pan).

  5. Mix together with 2 cups brown rice.

  6. Add soy sauce, oyster sauce, (fish sauce too, if you like). Season with garlic powder and pepper to taste.

  7. In the last few minutes of cooking, stir in tomatoes, then green onions.

  8. Serve by itself, or garnish with cilantro and/or lime.
