Low Calorie Thai fish dish. I use Rockfish as my fish.

Recipe Ingredients for Thai Fish and Spinach

16 oz flounder
1 cup chicken broth
1 tablespoon soy sauce
1 tablespoon lime juice
2 teaspoons cornstarch
2 teaspoons brown sugar
1/4 teaspoon red pepper
2 teaspoons canola oil
10 oz spinach
1 sweet red pepper
1 cup bean sprouts
1 medium onion
1/2 teaspoon coconut extract

Recipe Directions for Thai Fish and Spinach

  1. Combine ingredients beginning with broth in a small bowl. Set aside.

  2. Cut fish in small pieces, about 2 inches long.

  3. Coat wok with canola oil and heat at high. Add fish and cook for 3 minutes on each side. Remove from wok and keep warm.

  4. Reduce heat to medium-high and add sliced onion and sweet pepper which has been cut into strips. Add spinach, then been sprouts. Cook for 2 minutes. Add broth mixture, cook for 2 minutes stirring constantly. Add fish, stir gently and add lime zest and coconut extract. Serve over rice with chopped peanuts, basil and cilantro.
