Recipe Ingredients for Thai Fish Broth

12 oz cod
1/4 cup Lemon grass
3 fruit limes
2 red peppers, chillies
1 tsp ginger
1/8 cup coriander
1 tbsp rice vinegar
3 tbsp fish sauce

Recipe Directions for Thai Fish Broth

  1. Pour stock into pan and boil

  2. Slice lemon grass stalks diagonally

  3. Peel four wide strips of lime rind

  4. squeeze limes and reserve juice

  5. Add lemon grass, lime rind, chillies, ginger and coriander to stock. Simmer 1-2 minutes

  6. Add monkfish, rice vinegar and fish sauce with 1/2 reserved lime juice. Simmer 3 minutes.

  7. Remove coriander stalks

  8. Add lime as by taste, should be sour

  9. Sprinkle coriander leaves and serve
