Recipe Ingredients for thai egg prawn stir fry

1/2 cup brown basmati rice, dry
2 tbsp sweet chili sauce
2 tbsp soy sauce
1 tbsp toasted sesame oil
1 1/2 tbsp sesame seeds
1 cup snow peas
3 oz prawns
1/2 red pepper, sliced
3 green onions, sliced
1 garlic clove, large
20 g ginger, peeled and grated
2 eggs, beaten
1/4 cup coriander, chopped

Recipe Directions for thai egg prawn stir fry

  1. cook rice

  2. mix chilli sauce, soy sauce and sesame oil together, set aside.

  3. heat wok over high heat until narly smoking.

  4. Add sesame seeds and stir-fry till browned, then remove.

  5. stir fry prawns for about 1 1/2 minutes. Remove and place in sieve for any excess oil to drain.

  6. to the wok, add the red pepper with two tbsp of water, stir-fry for 1 and 1/2 minutes with lid on.

  7. add basmati rice, onion, garlic and ginger. stir-fry for another two minutes.

  8. move rice to one side of wok and pour the egg onto the base of wok. Egg should be in large peices so wait before mixing it in.

  9. leave for 30 seconds to sit, then add prawns, coriander, sauce ans sesame seeds.

  10. mix everything together and serve immediately.
