14 oz Mori-nu, Tofu, Silken, Firm
1 tsp Ginger Root
1 tbsp Red Curry Paste
1.5 cup Organic Chicken Cooking Stock
14 oz Coconut Milk
8 oz Mushrooms
4 oz Beans, Snap, Green
4 oz Snow Peas
2 medium Carrots
0.13 cup Lime Juice
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for thai curry veg and tofu soup

  1. put ginger and curry paste in medium saucepan. whisk in broth, coconut milk, 1/2 cup of water and 1 tsp salt. Bring to a boil.

  2. add mushrooms, beans and carrots. simmer 3-5 minutes. add tofu and snow peas. simmer 2-4 more minutes.

  3. stir in lime juice. sprinkle with basil leaves. serve
