Tofu and vegetable stir-fry with red thai curry and coconut milk, served on brown basmati rice

Recipe Ingredients for Thai Curry Tofu

354 g package tofu
2 cups broccoli, chopped
1/2 sweet peppers, green
1/2 sweet pepper, yellow
1 medium carrot
2 cups organic kale
2 cups brown basmati rice
14 ounces light unsweetened coconut milk
1/2 tsp red thai curry paste

Recipe Directions for Thai Curry Tofu

  1. Stir fry cubed tofu in olive or vegetable oil.

  2. Add chopped vegetables except kale. Continue to fry.

  3. Add coconut milk, curry, and kale. Bring to a boil. Turn down heat and let simmer for 10 minutes.

  4. Serve on boiled rice.

  5. Add fish sauce for extra flavour.
