Recipe Ingredients for Thai curry squash soup

1 1/2 lb acorn squash
1 large onion chopped
2 cloves garlic
1 tbsp red curry paste
1 tbsp curry powder
4 cups low fat chicken broth
2 cups light coconut milk
1 1/2 cups yogurt
1 salt and pepper
1 tbsp olive oil
1 cup chopped cilantro

Recipe Directions for Thai curry squash soup

  1. saute veg in olive oil until slightly soft.

  2. Add spices and stir for a moment until aromatic

  3. add stock, bring to a boil, and cook until veg are soft

  4. Puree with an immersion blender, then stir in coconut milk

  5. Salt and pepper to taste, and serve hot or cold with yogurt and chopped cilantro sprinkled on top
